Our Recipe idea: Potato salad
A real classic: when it comes to potato salad, opinions differ between vinaigrette and mayonnaise - but we prefer the fresh combination of oil and vinegar. Easy to prepare and ideal for prepping. We like the taste!
Ingredients:
1 kg waxy potatoes
2 red onions
4 tbsp olive oil
2 tbsp vinegar (e.g. white wine vinegar)
1 tsp mustard Salt and pepper to taste Fresh parsley (optional) to garnish
Preparation:
- bring the potatoes to the boil in a pan of salted water and cook for about 20-25 minutes until they are soft. Then drain and leave to cool slightly.
- Peel the cooled potatoes and cut into slices. Peel and finely dice the red onions.
- Mix the olive oil, vinegar, mustard, salt and pepper well in a bowl. Carefully fold the potato slices and diced onions into the vinaigrette.
- Leave the potato salad to infuse for at least 30 minutes to allow the flavors to infuse. Garnish with fresh parsley to taste before serving.
