Our Recipe idea: Koldskål
Danish buttermilk cold dish is a refreshing summer classic for hot days. It is traditionally served with Kammerjunker - small, buttery cookies.
Ingredients:
500 g buttermilk
500 g soured milk (alternatively yoghurt)
2 egg yolks (optional)
4 tbsp sugar
1 sachet of vanilla sugar or a little vanilla extract
Organic lemon Berries of your choice
Mini rusks or butter cookies
Preparation:
- beat 2 egg yolks with sugar in a bowl (you can omit the egg yolks if you prefer, then go straight to step 2).
- add the buttermilk and soured milk and mix well.
- stir in 2 tbsp lemon juice and a little grated lemon peel. Stir in the vanilla sugar.
- Stir in 2 tablespoons of lemon juice and a little grated lemon zest.
- Arrange a portion in a small bowl, top with berries and cookies as desired and serve.
