This knife has been produced in Japan almost unchanged for over 100 years. Its blade is, and this is a particular Japanese specialty, constructed in three layers: with a core of hard carbon steel, which ensures remarkable edge retention, and sides of softer steel. A folded sheet of brass serves as the handle of the Higonokami, in which the blade disappears completely when closed. It is easily opened using the angled lever at the height of the joint.
